Well, this is what I run and consider The Best Build™ – a glass-cannony (can't die if you don't get hit!) ultra-light dex/pyro. It got to the point I didn't use the chestpiece (Master's Attire) 'till late NG+/early NG+2 because I'd midroll. Also lol shield in DS3.

What are you using to parry? I, for one, find the Caestus and small shields better, even though parrying daggers and the like have more parryframes, so experiment with those if you hadn't maybe.
As for parrying Pontiff, I wouldn't know, just spammed him with GCFs v0v
